This Pink Bourbon comes from brothers Jhonatan and Johan Gasca, who produce specialty coffee on their family farm in Pitalito, Huila, Colombia. With a background in traditional coffee farming, the brothers have spent years developing their approach to quality, sustainability and innovative processing.
For this lot, only fully ripe, wine-red cherries are selected before undergoing a carefully controlled fermentation process. The coffee is fermented in-cherry for 60 hours, followed by a second fermentation after pulping, with reserved must and leachates reintroduced to build further complexity. The process is finished with a temperature-shock treatment and 10–12 days of closely monitored drying.
Pink Bourbon is known for its pronounced sweetness, lively acidity and silky body. This lot highlights the variety’s potential through meticulous cherry selection and an experimental approach to fermentation, while reflecting the Gasca brothers’ continued commitment to quality and consistency.
