Carefully harvested in selective cycles, the cherries undergo a multi-stage fermentation: 24 hours in wooden hoppers, followed by dry fermentation in ceramic tanks, and a final temperature regulated soak before washing. The coffee is then dried on raised beds for 12-15 days, resulting in a clean, expressive profile that reflects Dani’s commitment to quality.
