At 25 Brix, which is a measure of sugar content, these Pink Bourbon cherries were harvested and prepared for natural processing. The cherries were then floated to remove any that were bad before fermenting for 100 hours in anaerobic tanks. The coffee cherries were then moved to the drying area where they were dried on raised beds for 30 days before being milled. The care taken in production follows into a perfectly balanced cup with a gentle acidity.
